Day 28

My last Monday of vegan preparation for the week ahead - carrot and cashew spread, walnut, beetroot and mint dip and some more mint raw chocolate.

...and then a wee late night snack:
Vegan gooseberry fool.  I love gooseberries so much so had to try to recreate this- I sweetened stewed gooseberries with maple syrup and mixed them with soy 'cream' and soy vanilla yoghurt. Delicious!
