Day 20- the countdown to normality is on

I've been enjoying the M and S nutty Wholefood salad this weather and so I decided to have a go at it myself.

Basically it's carrot, sugar snap peas, broccoli, roasted nuts (cashew, peanuts, and almonds) plus black eyed beans and buckwheat.  I added my own homemade hummus and the dressing consisted of sesame oil, ginger, garlic, chilli, spring onions, tamari and tahini.  It was mighty fine and loads left over for tomorrow.



I'm panicking as I've made little in the way of sweet treats for the week ahead.  I do find the prep quite overwhelming at times, especially when I'm also planning and making for the kids.  I'm not sure how vegan, gluten free mothers do it all the time.
